Ingredients:

-5 eggs separated in egg yolk and egg whites
-1 cup Milk
-12 grams coffee powder
-200 grams icing sugar
-2 tsp vanilla essence
-1 tsp salt
-100 grams vegetable oil
-100 grams plain flour / all purpose flour

Procedure :

  1. Take warm milk in a bowl and add coffee powder and mix it well
  2. Take egg yolk, add vanilla essence, vegetable oil and then sift the all purpose flour
  3. Mix everything to ensure all ingredients are incorporated well.
  4. Add pinch of salt and mix and then keep the mixture aside.
  5. Take egg whites, make sure there is not a single drop of egg yolk i.e. the yellow part in this otherwise we won’t get required airy batter.
  6. Now whisk using hand blender and keep adding icing sugar part by part and keep whisking till you get soft speaks and the mixture is light and stiff.
  7. Add the egg whites whisk in coffee batter mixture part by part , mix the egg white using a spatula in cut and fold method to ensure the air in the egg white batter isn’t lost/ Add another batch and keep mixing , ensure you do not over mix the batter. Incorporate till everything is incorporated nicely.

Pre heat oven at 150 degree celious.

Prepare the cake tin:
  1. Grease using butter, dust the flour and then spread and tap off the excess flour.
  2. Pour the batter slowly, as you pour you can see small air bubbles are getting released, hence it’s important to pour slowly.
  3. Using a toothpick mix and break the air bubble and then tap it twice or thrice to get plain batter.
  4. Now take an aluminium tray and place the filled cake tin in it.
  5. Add little water and then keep the tin along with tray in oven and add more water in the tray.
  6. Bake the cake for 60 minutes.
  7. After 60 minutes you can see how nicely the cake has risen, to test if its bake nicely insert toothpick an it should come out clean.
  8. As each oven setting varies, would suggest keeping setting accordingly.
  9. Let the cake cool down for half and hour an de-mould it in a plate.

- Once it’s completely cooled down place a stark sigil cut out on the cake an carefully place a sieve over top and dust icing sugar on sides.

- Once you are happy with dusting, carefully remove the stencil so that the icing is not spread.
The delicious and super moist cake GOT cake is ready !!!
